Welcome to September. Kids are back in school though Labor Day hasn’t happened yet. This week was a flurry of activity in our household as we tried to prepare for the school routine starting up again. Outside, it still feels like summer, but I have been moving into the fall transition, especially with the way I’m starting to cook. The easy but delicious meals are needed more than ever now when school routines and activities become hectic.
This week, make this seared salmon with a caper compound butter. It’s full of flavor and deceptively delicious. The salmon sears up in no time, and if you double the compound butter, you can have it to put on other things throughout the rest of your week. Serve it on roasted vegetables or just swipe it across a piece of bread for a little snack. Any way you choose to use it, I hope you enjoy.
If you’re looking for a comforting dessert, that’s quick and easy, looking no further than this chocolate pudding cake. My son requested chocolate cake this week and this is the one I will be making. It starts easily enough with chocolate cake mix, but there are a couple of auditions that make it special and so comforting for a back-to-school week.
